Chocolate Chia Pudding

This recipe is so easy to make, especially if you have a Vitamix. love mine and have had it for over 5 years.  It does an excellent job of chopping the dates and chia seeds so they are no longer visible in this recipe (nobody wants chia seeds in their teeth, am I right?)

You could easily make larger batches of this recipe too. I use my ramekins for many recipes and they are great to serve dessert in when you have company over. Also, I recommend Ghirardelli unsweetened cocoa powder. Enjoy!

Chocolate Chia Pudding

Dairy free + Gluten free + Refined sugar free

  • 2 cups unsweetened vanilla almond milk
  • 1/3 cup chia seeds
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 4 dates
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt


  1. Add all ingredients to a high speed blender, like a Vitamix, and blend until smooth. About 60 seconds on high should do the trick.

  2. Pour the mixture into 4 ramekins. Chill for 2 hours or overnight.

  3. Top with shaved dark chocolate (Optional)

Recipe Notes

If you don't have a high speed blender you will most likely need to soak your dates ahead of time.
