Mango Salsa

I love salsa! This salsa has tons of flavor and is great with chips, veggies or a salad. Take it to your next pitch in and it’s sure to be a hit!

Dairy Free + Gluten Free + Refined Sugar Free

Ingredients

  • 1 small red onion diced
  • 2 small mangos diced
  • 1 can black beans rinsed and drained
  • 1 red pepper diced
  • 1 cup frozen sweet corn thawed
  • 1 Tbsp fresh cilantro chopped
  • 1 1/2 Tbsp fresh lime juice
  • 1/8 tsp sea salt or to taste
  • 1/8 tsp black pepper or to taste

Instructions

  1. Mix all ingredients together in a bowl. Chill in refrigerator for 30-60 minutes before serving.

Recipe Notes

 

I love this as a substitute for salad dressings on my salads. It makes the best summer salad.

It's even better if you make it the day before and let it chill overnight in the fridge.

BEANS:

I make large batches of beans from scratch in my Instapot. It is so fast and simple and saves money. If you are getting black beans from a can it's best to find BPA free cans (or get them in boxes) and no salt added.
