Healthy Strawberry Jello

I created this dessert for anyone that loves strawberries and jello but doesn’t want to consume all the refined sugar, artificial dyes, and artificial flavors. This recipe has no refined sugars which is a big plus! It’s sweetened with dates, honey and strawberries.

Healthy Strawberry Jello

Dairy Free + Gluten Free + Unrefined Sugar Free

Prep Time 10 minutes
Servings 4

Ingredients

  • 2 cups organic strawberries (frozen or fresh) SEE NOTES
  • 1/4 cup water
  • 12 pitted dates
  • 1/4 cup honey
  • 2 envelopes unsweetened gelatin
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • chopped fresh strawberries for garnish

Instructions

  1. Add all ingredients except gelatin and fresh strawberries to a high speed blender.  Blend until smooth on high. Approx 1-2 minutes.

  2. Pour mixture into a stove top pot or pan and heat until hot (it doesn't need to boil).

  3. Once  mixture is hot, sprinkle the gelatin on the hot mixture and stir. Sprinkling is key. Mix to dissolve.

  4. Pour mixture into 4 ramekins or bowls and chill for 2 hours or until it firms.

STRAWBERRIES:

If you are using frozen strawberries thaw before hand. Or another option would be to heat them with the 1/4 cup of water to speed up the process. Just don't let the water evaporate, you'll need it for the recipe.  Organic is best for many reasons, but for this recipe: TASTE!

GELATIN:

I used Knox unsweetened gelatin for this recipe. Knox is the brand I had on hand to use. I am sure there are better brands to use and I would love to know if you have a favorite brand.

EQUIPMENT: 

I use a Vitamix and I use it daily. I can't tell you how much better it is than most blenders on the market (well, I could but we would be here a while). Here is the one I have used for over 5 years and love: 5200
