Chicken Mariachi Pizza

I have always loved the flavor in Donato’s Chicken Mariachi Pizza. That should come as no surprise to any of you that know my love affair with Mexican food.  Here is my cleaned up version of this pizza. Since moving South I haven’t had Donato’s….BUT…I just saw a Donato’s the other day in Charlotte.  I may have to give it a try again and see if the love is still there. Enjoy!

Chicken Mariachi Pizza

Cook Time 10 minutes


  • whole wheat pizza dough link in notes
  • 1 6oz can all natural tomato paste low sodium
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 lb cooked chicken breast diced into small cubes or shredded
  • smoked provolone cheese shredded or sliced
  • mild cheddar cheese shredded or sliced
  • roma tomatoes sliced
  • black olives
  • jalapeño peppers sliced and seeded


  1. Mix tomato paste with one tomato paste can full of water (or 1/2 cup if you like to measure), stir until well blended.

  2. Add all other ingredients and stir.

  3. Top pizza dough with sauce.

  4. Add toppings to your liking and top with cheeses.

  5. Bake on pizza stone at 450° for 10-15 minutes. (Adjust accordingly the first time you bake in your oven)

Avoid using processed shredded cheeses. It's always best to get blocks of fresh cheese and shred at home. (Read those LABELS) It's often hard to find good quality smoked cheeses that don't break the bank. If you find a smoked cheddar instead, use it and get regular provolone. Or simply try them non-smoked and see if you like it.

Most bagged cheeses have natamycin, a mold inhibitor, in them. This is something added so it doesn't mold as quickly.  Trust me, you want real cheese that molds. It tastes WAY better too. I haven't bought a bag of cheese in over 6 years. If I can do it, you can too! Ditch the bags. 

They also usually have cellulose added to them which can mess with your metabolism. A study in 2015 linked it to weight gain, inflammation and digestive issues. I avoid both of these ingredients. Read the ingredients before buying cheese!

Now, some will argue that Natural Smoke Flavor in cheese isn't natural, but I pick my battles and use it rarely.  

The best olives are at the olive bar in the produce section at your local grocery store.
