Healthy Chicken Soup with Kale
I love this soup. This soup is a great to make when you aren’t feeling yourself. I’ve also made it for friends and family when they are recovering from a sickness or surgery.
Bone broth is great to boost the immune system and helps heal leaky gut syndrome!  You can also make your own bone broth for this recipe which is even better. There are many recipes online for bone broth. Make sure you don’t waste the broth and drink every drop of your soup. That’s the good stuff, y’all!
Many Farmers Markets and health restaurants are serving up homemade bone broth in coffee cups as a beverage.

Healthy Chicken Soup with Kale

  • 1 Tbsp organic extra virgin olive oil
  • 1 sweet onion chopped
  • 2 garlic cloves minced
  • 4 celery stalks chopped
  • 3 medium carrots peeled
  • 1/2 - 1 cup kale I used frozen, chopped
  • 4 cups Organic chicken bone broth I use Pacific brand
  • 1 tsp Parsley
  • 1 tsp Oregano
  • 1/2 tsp Thyme
  • 1/2 tsp Black Pepper
  • 1/2 tsp Sea Salt
  • 1/2 cup dry brown rice cooked
  • 1 breast chicken cooked and shredded


  1. Add EVOO, onions and garlic to pot and saute until onions are translucent. 

  2. Add in celery, carrots and kale. Saute for a few minutes.

  3. Add chicken bone broth, parsley, oregano, thyme, pepper, and salt and simmer (covered) until veggies are to desired tenderness.

  4. Add chicken and rice. Stir. Serve. Salt and Pepper to taste. 

Recipe Notes

Using Organic is best.

INSTAPOT: You can add ALL ingredients to an instapot and cook that way.

CHICKEN: Local is best. You can bake your chicken in the oven, you can buy rotisserie chicken or you can cook it in an Instapot.

VITAMIX: I have made it by rough chopping veggies and then fine chopped them in my Vitamix too. I've also chopped my chicken in the Vitamix as ell.

GET CREATIVE: You could add any pasta or rice your would like to this recipe. You could also add white beans to this recipe. I like to make double or triple this recipe at a time.
