  1. Add all ingredients to a large pot and cook on medium heat until carrots are tender.
  2. Serve topped with crushed tortilla chips.

Instapot: set it to soup setting for 10 min or manual for 10.

I also add guacamole as a garnish to this soup. It takes it to the next level. YUM!

If you have time, grill your chicken to add more depth of flavor.
