No Bake Energy Balls

No Bake Energy Balls

These little nuggets of love had me at NO-BAKE…These are super simple to make and the possibilities are endless. These make a great snack in school lunches or on the go, an after school snack to fuel up for homework, and even a great satisfying dessert!

Trust me, they are delicious!

Instructions
  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Recipe Notes

NOTES: I typically make a double batch and use only a 1/2 cup of chocolate for the double batch. It all depends on how many of them you eat a day and how dark your chocolate is as to whether or not you should cut it back. I also find that the mini chips work best in this recipe.

I use Enjoy Life Dairy Free Mini Chips!
