Chocolate Chia Pudding

  • 2 cups unsweetened vanilla almond milk
  • 1/3 cup chia seeds
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 4 dates
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt


  1. Add all ingredients to a high speed blender, like a Vitamix, and blend until smooth. About 60 seconds on high should do the trick.

  2. Pour the mixture into 4 ramekins. Chill for 2 hours or overnight.

  3. Top with shaved dark chocolate (Optional)

If you don't have a high speed blender you will most likely need to soak your dates ahead of time.
